Ta-Da!

Roasted Chicken

Mmm. (:

A few notes for next time:

-Onions take longer to cook than carrots, celery and potatoes
-Add more potatoes
-Let air dry in fridge for 1-2 days
-Definitely let the sucker come fully to room temperature
-Start oven at 475 for 15 minutes then reduce to 450 for the remainder

I'm proud of my first attempt, nevertheless.
